Food-to-go operator The Salad Project is planning to open four new stores over the next four months, bringing its total portfolio to 11 sites. 

Unveiling the plans on on LiinkedIn today (2 June), co-founder Florian de Chezelles said: “Four years ago to the day, my best pal James and I opened the doors to our very first The Salad Project store in Spitalfields. Today we’re announcing the opening of four new restaurants over the next four months.” 

The new stores will be opening on the Nova development in Victoria, Southwark, Westbourne Grove in Notting Hill, and Battersea Power Station. 

“Here’s to the next 4 years; 4 stores? 40 stores? 400 stores?” de Chezelles continued. 

The London-based company, which provides customisable salads and protein bowls, opened its first store in Spitalfields in the summer of 2021 and has since expanded to a further six sites across London. Current locations include Bank, Oxford Circus, Mansion House, Fenchurch, Tottenham Court Road and Bond Street. 

Last year, the popular salad chain launched a new concept, ‘Spaces’, in its Mansion House site, which gives customers the option to order their salad or bowl online and collect in store.

At the time, de Chezelles told The Grocer it saved customers an average of 13 minutes, enabling them to “get their salad in two minutes versus about 15 when queueing in the traditional stores”.

The Salad Project also previously partnered with plant-based food and wellness platform Deliciously Ella to bring a limited-edition plant-based menu to its London customers.
