Leon has launched a new spring menu featuring returning items, large boxes and new sauces after owner and co-founder John Vincent vowed to return the food-to-go chain to its roots.

From today (29 April), Leon will be introducing a new Mushroom Magic Rice Box and is bringing back its Grilled Chicken Rice Boxes “that helped build the reputation of the brand in the first place”, Leon said.

The rice boxes will be available in a smaller size and a new large size, “designed to deliver more from every meal”. Each box is built around brown rice, a variety of vegetables and ferments, slaw, fresh herbs and a seven seed mix.

The large boxes include Aioli Chicken, Satay Chicken, Salsa Verde Chicken, Mushroom Magic Romesco, and Mushroom Magic Aioli.

Flavours available in the small boxes include Aioli Chicken, Satay Chicken, Mushroom Magic Romesco, and Brazilian Black Beans.

Alongside this, Leon will be rolling out an Aioli Chicken Wrap and a Chargrilled Chicken Super Salad with Middle Eastern-spiced vegetables, grains and greens.

All of Leon’s chicken has been reworked, with the chargrilled thigh marinated in garlic, parsley, lemon and extra virgin olive oil for “deeper flavour and added nutritional benefit”, the brand said.

New sides include the Leon Slaw, which contains 20 different plants, and a Brazilian Black Beans Pot served with brown rice.

Meanwhile, sauces “remain key” to Leon’s strategy. The brand has brought back its Salsa Verde and is launching a Smoky Romesco made with toasted pumpkin seeds, roasted red peppers and sherry vinegar.

Tapping into trending drink flavours, the healthy fast food chain will also be offering a Strawberry Split Matcha.

All menu items will be available for eat-in, takeaway, click & collect, and delivery.

The changes to the menu come after Vincent returned to the brand in October and vowed to reinvigorate the chain and return it to its core values.

The first of the menu updates was unveiled last month, with the return of the Fish Finger Wrap. At the time, Leon said more “much-loved favourites” would roll out and that its spring menu launch would mark “a new era for the brand”.
