Mindful Chef is to launch a range of recipe boxes aimed at supporting gut health, created in partnership with Dr Megan Rossi.
Rossi (aka the Gut Health Doctor) is a registered dietician and the co-founder of gut healthy breakfast brand Bio&Me.
The year-long partnership, Mindful Chef’s “most expansive to date”, will offer consumers a range of “deliciously diverse, feelgood recipes across the year”, according to Bio&Me.
An initial six “plant-packed” recipes created by Rossi will launch on Mindful Chef’s website imminently, available for delivery on 27 April.
They are: Sunshine Pasta with Roasted Butternut Squash, Baked Cod, Tomato Butterbeans & Dill Roasties, Beetroot, Lentil & Goat’s Cheese Salad, Harissa Roasted Aubergine with Red Pepper Sauce, Creamy Coconut Butter Beans with Sweet Potato & ‘Live’ Raita, and Trout, Courgette & Cannellini Bean Spring Stew.
Each portion contains at least a third of the recommended daily fibre intake
Shoppers who purchase one of the four kefir-based recipes will receive a 250ml bottle of Bio&Me Natural Kefir.
The partnership responds to Mindful Chef’s Healthy Eating Report 2024, which found that improving gut health was “high on the agenda” for its customers.
“There’s a growing interest in gut health and cutting back on ultra-processed foods, and that’s exactly why this partnership makes so much sense,” said Mindful Chef CEO Tim Lee.
