Scottish salmon supplier Loch Duart has bought two disused fish farms off the Hebrides to meet soaring product demand.

The new sites increase the number of Loch Duart's salmon farms to eight and will increase production by 30%. The acquisitions were made as the company announced it had tripled export sales over three years - a feat that helped it scoop The Queen's Award for Enterprise this week.

Demand for the salmon has been boosted by the sustainable farming methods and high environmental and welfare standards in which the fish are raised, claimed Nick Joy, MD. Although the sites had previously been rejected by larger salmon farms for being too small, they were deemed ideal for Loch Duart. "Smaller farms produce better tasting fish because you can have easier control over a lower density of stock," said Joy. "Our products are higher priced than regular farmed salmon but they have a taste that is very close to the wild variety."
